Parcels vinified separately, fermented for 80% in oak barrels and 20% in stainless steel tanks. Partial malolactic fermentation. No racking, 1 or 2 stirring of the lees in oak barrels. Bottled in spring 2011, without filtration. No Dosage. No addition of SO2.
