This is a beautifully balanced wine with aromas of cassis, black cherry and cocoa powder along with rich fruit flavors of dark plum and cherry pie finishing with a note of graphite. A classic Cabernet Sauvignon showing off deep color, layered aromatics and generous tannins. Food Pairing: An excellent companion to aged blue cheese, braised or grilled beef, and roast pork with fruit.
James Mitchell Cabernet Sauvignon 2014Produced from fruit grown, managed and harvested by James Mitchell viticulture and winemaking teams. Approachable but substantive, featuring ripe, lush fruit flavors with a touch of oak. Wine as real as Lodi - rugged, bold and honest. We harvest at night as the Delta breezes come up and sort through the vineyard to make sure only the cleanest grapes grow in the winery. We ferment in stainless steel at 84°F for about 12 days, then leave the wine on the skins, tasting at least twice a day to ensure the right texture and tannin levels before pressing. For aging, we use both stainless steel (for freshness) and French and American oak barrels. We like combining white oak species - the French is elegant, tighter grained and spicy, while the American is vanilla, brown sugar and toast. After 12 months, we finalize the blend, adding Petit Verdot, Petite Sirah, Merlot and a touch of Malbec.
Justin Cabernet Sauvignon 2014Appearance: Dark ruby purple core lightening to medium intensity at the rim with moderate staining on the glass. Aroma: Aromatic black fruit of cherry and blackcurrant jam, baking spice, dried leaf and sweet tobacco. Palate: Full bodied with bright black cherry, blackcurrant and berry fruit with an underpinning of oak barrel accents on entry. The mid palate shows continued fruit with savory herbal notes, mint and a hint of violet. The finish is clean, long and layered with lingering dark fruit surrounded by soft chewy tannins balanced by crisp acidity and subtle floral notes. Pairings: The 2014 JUSTIN Cabernet Sauvignon is a versatile red wine that pairs well with most red wine friendly dishes and a little more. As good with pasta and burgers as it is with beef wellington or entrecote bordelaise, this is a wine with broad pairing possibilities for both dishes and palates.
Buehler Vineyards Napa Valley Cabernet Sauvignon 2013The wine is brimming with fruit aromas and flavors biased to the black fruit end of the Cabernet spectrum: plums, blackberry, and black currant. Rich and full-bodied on the palate, this Cabernet drinks well on release but will soften and develop with additional age. For those who seek youthful fresh Cabernet fruit aromas and a more structured wine, drink it from 2015 through 2019. If you prefer the less fruity, more developed bottle bouquet aromas and a softer, more velvety wine on the palate, drink it from 2020-2030.

Mettler Family Vineyards Cabernet Sauvignon 2011The dark ruby-hued Mettler 2011 Cabernet opens with delicate aromas of black cherry and cedar with some nice earthiness and a hint of black pepper. Smooth and medium-bodied on the palate with delicious flavors of dark chocolate, cherry and ripe black currants with a hint of light toasty vanilla carried through on soft-edged tannins. This wine exhibits a beautifully orchestrated balance of fruit, oak and tannin with a nice thread of acidity that sails through to the lingering finish. An elegant and poised Cabernet that is accessible now, but with a solid core of flavors and complexity to see it through many years of aging.
