Kathryn Kennedy Estate Cabernet Sauvignon 2009100% Cabernet Sauvignon. The vines cover gentle slopes in Saratoga, California on the inland side of the Santa Cruz Mountains. Eight acres of vines were planted on their own roots by Kathryn in 1973. Excellent soil, a climate possessing just the right amount of marine influence, and personal attention combine to yield outstanding grapes. Each vintage is grown by hand and vinified in small lots followed by gentle barrel aging with 90% French oak. The result is big, full-flavored wine with deep color and a decade or more of aging potential. Caymus Special Selection Cabernet Sauvignon 2013 1.5LCaymus Special Selection is the flagship wine of the Wagner family and is comprised of the very best barrels of the vintage. This wine is not produced in difficult years. Caymus prides itself on producing wines that are as approachable in youth as well at maturity. Aromas and flavors which can only be achieved through "hang time" - a technique which chances the loss of crop if early winter sets in. Leaving the fruit to "hang" on the vine unusually long develops suppleness, increases color, and matures the tannins of the grapes. The wines are abundant in textural tannins yet soft as velvet. Crop thinning, allowing measured sunlight to reach the vine's fruit zone, and waiting for increased ripeness are all part of our viticultural practices. Core flavors of blackberry, pomegranate and black currant reduction are framed by notes of cappuccino, bitter-sweet chocolate and dark caramel. This wine presents well-integrated oak from the fourteen month, 90% French oak regimen. A persistent finish lingers on the palate, echoing the core flavors and reminding us of the finesse of this Cabernet Sauvignon. Enjoy on its own or pair with slow-roasted beef brisket, blackened swordfish atop herbed couscous, or a wild mushroom tart with chevre topping.

Daou Soul Of A Lion 2014The 2014 Daou Estate Soul of a Lion shows beautiful depth of color. This inky purple wine is loaded with aromas of plums, creme de cassis, garrigue and exotic flowers. On the palate, the wine is layered with velvety tannins and shows a unique elegance while being accompanied by extreme intensity and power. Nuanced vanilla bean, toasted spice, graphite, licorice and lead pencil shaving like aromas round out the spectrum flavors. Insanely concentrated, it has a gorgeous harmonious length that extends into a seamless finish which lingers on the senses. Modus Operandi Cabernet Sauvignon 2010Grown mostly from the Coombsville region in southern Napa Valley, the Modus Operandi cab blend is always a barrel selection of my finest Cabernet Sauvignon vineyards from my favorite new French oak barrels. The grapes were hand sorted in the vineyard, optical sorted by the amazing Pellanc machine, then hand sorted again on 30 feet of sorting table with 16 people ensuring that only the most perfect berries make it to our fermentation vessels. Here we fermented in 100% new French oak barrels, and matured in 75% new French oak for 24 months.
