Our Chardonnay is 100% barrel fermented in French oak barriques. Fermentation is allowed to take place over the course of 4 weeks, after which the wine is stirred on the lees in a labor intensive practice referred to as Battonage, resulting in the rich finish that compliments flavors of lemon and green apple. 50% of the wine undergoes malolactic fermentation, while the remainder does not to preserve acidity and vibrancy. The wine is aged in a combination of stainless steel, and French oak barrels.
