Domaine du Murinais Crozes Hermitage Vieilles Vignes 2007
Luc is a meticulous farmer who employs many organic viticultural techniques to lower yields and minimize pests. No chemicals are used. He performs rigorous de-budding down to just 3 buds on two shoots per vine as well as green harvesting. Every other row is plowed by hand and the alternate rows grow cover of weeds and herbs to promote root depth and beneficial microbial activity. All harvesting is done by hand into small 20kg trays. Grapes are partially de-stemmed (60-70%) and given a cold soak at 10 degrees C for 7 days. Vinification takes place in cement tanks with natural yeasts for 21 days with twice daily pump-overs. Press wine is always sold to the bulk market and never makes it into the final blend which is racked into 2,3 and 4 year old barrels for a minimum of 10 months. The wine is bottled unfined and unfiltered.
